More about Ludovica Menardi

Hello! I’m Ludovica Menardi, I’m 27 years old and was born and raised in the Dolomites of Cortina d’Ampezzo.

My culinary journey started right here, moving from one mountain hut to another while studying at hospitality school. After my first work experiences, I felt the need to deepen my training and chose to attend Alma – the International School of Italian Cuisine – which led me to an internship in the Langhe, Piedmont.

My path then continued in the mountains of the Upper Engadin, in St. Moritz, where I grew in a truly international and inspiring environment. After a period in London to perfect my English, I had the opportunity to spend a short yet transformative time at Noma in Copenhagen, an experience that changed my whole approach to food—more instinctive, natural, and deeply connected to the land.

Since then, I have explored many different aspects of cuisine, focusing on fresh pasta, bread, fermentation, sustainability, and foraging.

Today I am back in my Dolomites, where I’ve chosen a slower and more authentic lifestyle. I cultivate my own vegetable garden, forage for wild herbs, prepare preserves and herbal teas, and continue to learn every single day. I also collaborate with Wood*ing, a research center dedicated to wild food.

Through my courses I share not only what I’ve learned, but also what I keep discovering daily: practical, seasonal knowledge deeply rooted in nature. My cuisine is born from the roots of local tradition, while also reviving ancient culinary practices that deserve to be rediscovered.
